This is the perfect breakfast for kids (and adults) who hate breakfast. It’s like eating a mug of warm fluffy cookie but it’s highly nutritious and a great source of complex carbs, protein and fibre to start the day.
Ingredients
1 large banana, mashed (if too strong, use half a banana)
1 tablespoons peanut butter
1/2 cup of rolled oats
Splash of Full fat milk
Flake salt, to taste
Ground cinnamon, cacao nibs, chia seeds, LSA and berries optional
Directions
Fully mash a banana in a mug. Mash in peanut butter until fully combined. Stir in oatmeal. If mixture is too dry, splash a bit of milk and continue mixing. Press mixture down until it’s flat.
Microwave for 2 minutes or until oatmeal becomes slightly translucent and the top becomes spongy and cake like.
Garnish with flake salt, ground cinnamon, cacao nibs, and/or berries.
Ground cinnamon is a great addition as it stabilises blood sugar levels. The oats are full of complex carbs, fibre and protein to improve mental focus and provide energy, whilst keeping you full for longer. Adding chia seeds and LSA will introduce healthy omega 3 fats (soak chia seeds first).
Banana is a great source of vitamin B6 (necessary for metabolism, to burn fat and carbs) and a good source of manganese, vitamin C, potassium, dietary fiber, potassium, biotin, and copper.
