We made the nut free lunchbox protein and high fibre oat balls last week after school and for the first time I convinced my picky eater daughter to try them. My son and husband will always inhale them, but my daughter was always another story. So she helped me mix and roll them and then tried a little nibble. Lets just say that she was so sold that half of them were gone by the next morning.
These balls are so easy to make and so healthy. I love that they are nut free as so many protein balls aren’t. They only have 4 ingredients – Oats, dates, cinnamon, apple. Even better …. they are freezable so they’re an excellent lunchbox choice with very little planning ahead.
Oats are one of the best things you can give your kids to keep them energised and focused throughout the day at school and healthy in general. They’re also great for appetite control/ satiety, immunity, iron and boosting fibre in their diet. Lets face it most kids really do struggle to get enough fibre and iron in their diet. Oats are also packed full of protein and magnesium.
Dates are another excellent source of dietary fibre, magnesium and potassium which helps balance out the sodium in kids diets, and control blood levels which is important for their heart and nervous systems. And Vitamin B6 which is necessary for kids to metabolise carbohydrates and maintain a healthy brain and nervous system. The perfect food for a day at school with all that learning and paying attention! Combine them with the fibre of apples this is one fibre powerhouse!
You can also vary this recipe by adding Cacao Powder, desiccated coconut and a little coconut oil however the coconut oil will make it a little richer, but I also find it makes them firmer when combined with the cacao powder.
