Almond pancakes are a great low carb choice for people who need to reduce their carb intake (pre diabetics for instance).
- 1 cup almond flour
- ¼ cup water (sparkling water for flufflier)
- 2 eggs
- 1 tablespoon maple syrup
- 1 teaspoon olive oil
- ¼ teaspoon salt
- Whisk flour, water, eggs, maple syrup and salt together until smooth,
- Heat oil in pan, drop batter in large teaspoons until bubbles form and the edges turn dry
- Turn and cook (3-5 mins each side).
